Cookies and Cream Cupcakes

Hey y’all!

So yesterday we found this DELICIOUS looking recipe for Cookies and Cream cupcakes off of Annie’s Eats. Her site is full of great cupcake recipes; I love finding cupcakes here. So these are super simple and don’t take much time at all, but they come out great!

So other than the usual baking ingredients, I would get 2 packages of Oreo cookies at the store. The recipe was basically just a white cake with oreo added, but there’s something about that combination that creates heaven.

So we started by separating all of our Oreos so that the cream was all on one side. It may seem like this would be easier with a knife, but trust me, it’s not. We found that the easiest way to do this is just twisting them. Then we placed them into the cupcake liners in our baking pan.

Don’t throw these away, since they’ll be used later!

We then made the batter. Like I said before, the batter was actually really basic, just with coarsely chopped Oreo cookies added into it.

We filled our cups a little more than 2/3 of the way full, because these don’t rise as you would expect with other cupcakes.

We baked our cupcakes for 16 minutes, or just until slightly golden on the outside. I would be careful to watch them as to not overcook the bottoms.

Allow them to cool in the pans for 5-10 minutes, then let them completely cool on a cooling rack before icing them. We took our extra Oreo cookies that we had separated from  the icing and chopped them up in our food processor. We sprinkled them onto our iced cupcakes and added a half of an Oreo as a garnish.

So there ya’ go! A really simple recipe that comes out really great!
