Snickerdoodle Muffins!

Hey Y’all!

So since we were given a much needed 4 day break from school, we decided it would be the perfect time to bake! We decided on a breakfast pastry this time – a snickerdoodle muffin from Melissa Bakes. This was the first recipe that we had gotten from here, but it turned out great and we will┬ádefinitely go back to look for more!

The recipe appeared to be just like any other cupcake, with just a few little variations.

This snickerdoodle coating (found in the bottom left) was just a super simple combination of sugar and cinnamon, nothing special.

So usually after making the batter you would just use your ice cream scoop to plop a dollop in the cupcake liner and stick ’em in the oven right? Well… these are a bit different.

Yep, that’s right! Before the batter goes into the liners, first it needs to be covered and smothered in cinammon coating. This is where it gets a bit complicated. This recipe didn’t have very descriptive instruction on how to do this except to “gently roll the batter”. This “rolling” method is a bit difficult… so we decided to use the ice cream scoop to kind of flip the batter around until it was completely covered then place it into the liners. Worked out for us! Maybe you can find a method that works even better!

Our batter made a full 24 cupcakes, but as you can see, we had a TON of our coating left over. We did as the recipe said and sprinkled some of the coating over the top, but that didn’t seem to help much. We were afraid that we didn’t use enough and that they wouldn’t come out tasting too great, but no worries, they came out amazing! Not sure what to do with our crazy excess of cinnamon-sugar though…

Drum roll please…

Ta-daaa!

Hey y’all!

So we’ll just start out by saying that both of us absolutely LOVE cinnamon rolls. We love them. So this morning for breakfast, we decided to try something new. We found this recipe for 8 minute cinnamon rolls on the Iowa Girl Eats site and thought we would try it out ourselves. Now, we will say that they definitely took a bit longer than 8 minutes, but they were fairly easy.

We started with one pack of Pillsbury Crescent rolls. We took half of the pack (4) and placed them next to each other. After pinching the seams together, we rolled it out to make an even rectangle

Then, using a pastry brush, we covered it with a little less than a tablespoon of butter. We sprinkled it with cinnamon and brown sugar rolled it into a stick of goodness.

Our trick for slicing the rolls was to use dental floss! Just grab some unminted dental floss and slice away! They end up slicing really easily.

After you slice them, you can place them into a greased pan. We always grease our pans with our magic pan release (which can be found here). You can then start on your other half of the dough, repeating the same process. We ended up with 18 rolls in all.

The glaze is a simple combination of syrup, milk, and baking powder. After baking for 8 minutes, we poured our glaze over the warm cinnamon rolls. They came out perectly and tasted absolutely heavenly!

So simple, yet SO delicious.
